螺蛳粉火出圈,海外网友纷纷试吃,有内味儿了!

螺蛳粉最近真的火到出圈了。

居家隔离的日子里,没法约火锅、撸串,袋装螺蛳粉就格外吃货友好了。再加上各大电商主播推波助澜,螺蛳粉乘势而出。

One of the best-selling ready-to-serve food for stay-at-home foodies amid the epidemic in China might surprise many — an instant river-snail noodle known for its stinky smell, Luosifen.

近日,柳州市商务局提供的数据显示,去年袋装螺蛳粉产值突破60亿元,今年上半年已经达到49.8亿元,预计今年全年将达90亿元。

今年5月,柳州人甚至还成立了柳州螺蛳粉产业学院,今年计划招生500人。

Liang Xuhui, deputy Party secretary of Liuzhou, said the city government attaches great importance to the development of the luosifen industry, which is now worth more than 10 billion yuan ($1.43 billion) a year. “The establishment of the luosifen school is expected to help advance the enterprise," Liang said, adding it would receive subsidies and policy support from the local government.

柳州市委副书记梁旭辉表示,柳州政府非常重视螺蛳粉产业的发展,目前该产业年产值超过100亿元。他说:“螺蛳粉学院的成立能推进企业发展,学校将得到当地政府的补贴和政策支持。”

 

从特色小吃到网红美食

螺蛳粉起源于上世纪70年代末,80年代初,当时只是柳州街头上便宜的小吃。

自2012年在《舌尖上的中国》露面,这碗配料丰富,味道独特的米粉吸引了大江南北的美食爱好者。

螺蛳粉之所以能获得大家青睐,奥妙就在汤底。

地道的螺蛳汤由柳州本地青螺与辣椒,大蒜,紫苏等十三种天然香料一起爆炒,然后再加水慢火熬制数小时而成,是不是听起来就让人流口水呢!

这样鲜辣酸爽的汤底,再配上劲道的米粉,辅以酸豆角,酸笋,木耳,花生米,油炸腐竹,萝卜干等食材,大家不爱都难。

它虽然不像兰州拉面,沙县小吃那样随处可见,但却通过网络和物流,摆上了我们家里的餐桌。

不仅国内的小伙伴沉迷螺蛳粉,外国朋友们也逐渐get到了螺蛳粉的美味。

中国的美食博主们在国际视频平台上崭露头角,日渐成熟的电商和发达的物流,让越来越多的海外朋友爱上嗦粉。

Luosifen often shows up in videos by food bloggers and Mukbang uploaders. One of the most influential is Li Ziqi, who has 11.4 million subscribers on YouTube. Her video of how to make Luosifen has gained more than 42 million views on the website.

螺蛳粉也经常出现在美食博主和吃播播主的视频中,其中最有影响力的是李子柒。她在YouTube上有1140万订阅者,制作螺蛳粉的视频获得超过4200万的点击量。

Mukbang指吃播(韩语“吃饭”和“播放”的结合)

Youtube上李子柒制作螺蛳粉的视频突破了4千万次播放量。从抓螺蛳、采笋、腌制豇豆一步一步开始,浪漫田园诗似的螺蛳粉制作过程,让评论区一片艳羡。

很多国外播主也拍摄过螺蛳粉试吃的视频,拿着叉子像吃意大利面一样卷起螺蛳粉的样子让观者感到一种“错位”的快乐。

"In terms of flavour, it didn’t taste as odd as I was expecting, and was very similar to a pork or chicken broth with a hint of something else, which I suppose was snail. The chili oil complimented it well and the pickles added a little crunch to the dish. I’d definitely order luosifen again next time I’m in Guangxi!"

“螺蛳粉尝起来并没有想象中那么奇怪,味道很像猪肉汤或者鸡汤,不过夹杂着一丝别的味道,应该是螺蛳。倒上辣椒油以后味道刚刚好,酸豆角也添了点嚼劲儿。下次去广西我一定要再吃一碗!”

1月2日,在柳州市螺蛳粉产业园螺状元食品有限公司车间,工人在生产线上包装螺蛳粉。

下面这位则是对汤底情有独钟。这点评已经是有点专业级别的了。

Katherine Hamilton:

"The broth, as far as I'm concerned, is what makes the soup so special: It was simultaneously spicy, pungent, earthy, sour, and funky, while allowing the flavor of all the toppings to shine through. The silky, slippery round rice noodles, just a little thicker than spaghetti, were a welcome reprieve from the robust flavors while adding another dimension of texture."

“我认为螺蛳粉的精华在汤,喝起来麻辣酸臭,带点泥土味儿,却没有盖住其他配料的香味。圆米粉入口顺滑,比意大利粉粗一点点,解辣的同时,多了分别致的口感。”

从出口的数据上看,螺蛳粉今年的出口额呈现“井喷”式的增长。

A total of around 7.5 million yuan (US$1.1 million) worth of luosifen were exported from Liuzhou, South China's Guangxi Zhuang autonomous region, from January to June, eight times the total export value of 2019.

今年1月至6月,广西壮族自治区柳州出口了价值约750万元(110万美元)的螺蛳粉,是2019年出口总额的8倍。

In addition to the traditional export markets such as the United States, Australia and some European countries, shipments of the ready-to-serve food were also delivered to new markets, including Singapore and New Zealand.

除美国、澳大利亚和欧洲国家以外,即食螺蛳粉还首次进入新加坡、新西兰等国家。

看来这又香又臭的螺蛳粉的确是征服了一众外国朋友的味蕾。
